Update email settings for a tenant. The inbound routing address is NOT writable here (#1361): it is the identity the webhook matches inbound mail against, and the old single-column design let the editable reply-from field silently overwrite it. Custom inbound addresses are an operator concern; reply-from is the merchant-facing setting.
